| Title: a newbie with hotcake problems
My goal for the winter is to learn to imitate the wonderful sourdough
hotcakes I had at the Otis cafe near Lincoln City, OR! About two weeks ago I
made my own starter from potato water, flour and a little sugar. I've now
made two batches of hotcakes with following recipe (1 C starter, 1 Tbsp
sugar, 2 Tbsp oil, 1 egg, scant 1/2 tsp salt, and scant 1/2 tsp soda -
dissolved first in a bit of warm water). The flavor is wonderful, but they
don't seem to get done inside. I lowered grill temp and cooked longer, but
then they got tough on the outside.
